It’s irresistable, and yes, it’s straight up decadent, so handle with care. My advice, make it, enjoy it, and give a lot of it away! Not only will you be spreading love and pink and white cheer, but you will be saving yourself from a sugar crash and the need for an extra hour of workout time!

Coconut ice is super pretty. That pure, icy pink contrasted with brilliant white. It’s also one for those with a sweet tooth, and those who just LOVE coconut! It’s a winner for a party, where the pink naturally makes it perfect for girl’s party themes, but boys will munch away on these without any qualms (refer to sugar content!) And on top of all that, it’s a very pretty baked gift, if you wrap it or put it in a glass jar or cookie tin, delightful!

EVEN better, it takes very little time to prepare and NO BAKING! Just mix ingredients, lay the two colors in a tray, pop in the fridge, then cut into squares. Here’s the recipe:

Coconut Ice

Description

A super easy, no bake recipe for deliciously sweet, pretty, pink and white coconut ice squares. They make great party food, as well as awesome gifts in pretty packaging.


Ingredients

Scale
  • 160ml sweetened condensed milk
  • 2 cups icing sugar
  • 2 cups desiccated coconut
  • 24 drops red/pink food colouring

Instructions

  1. Sieve the icing sugar.
  2. Now add the coconut and condensed milk to the icing sugar and mix together until well combined.
  3. Divide the mixture in half and to the one half add the food colouring and mix well.
  4. Press the white mixture into the base of a square pan or even a plastic lunchbox.
  5. Now spread and press the pink mixture over the white mixture.
  6. Place in the fridge so that it can harden.
  7. Once it has set, cut into small squares.

Notes

You do not even have to put in the fridge if you don’t want to, it will set after a while on its own!
