Welcome to the first in my series of Gluten Free Recipes! My friend Isla who is a smoking hot chef, made these for me and is going to be supplying the recipes for this series on Gluten Free yummies! She has a lot of experience baking gluten-free foods so she is the perfect partner for this project. So although I didn’t bake these babies, we sure did eat them – A whole box was delivered to my front door…. Oh My!! I would never in a hundred years have said these were Gluten Free! They were amazeballs. Let me know what you think of the recipe in the comments. With regards to the gluten free self-raising flour, you should be able to get this from PicknPay, Dis-Chem or a health shop.
Gluten Free Vanilla Cupcakes
- Total Time: 35 minutes
Ingredients
- Vanilla Cupcake
- 125g softened butter
- 125g caster sugar
- 2 eggs
- 125g gluten free self-raising flour
- 2 teaspoons vanilla extract
- 3 tablespoons milk
- Buttercream Icing Recipe
- 200g softened butter
- 200g icing sugar
- 60ml milk
Instructions
- Preheat oven to 180°C
- Cream together butter and sugar until light and fluffy
- Add eggs one at a time and mix
- Mix milk and vanilla together in a jug
- Fold in the milk mixture and flour and mix until smooth and combined
- Fill cupcake cases half way up
- Bake for 20 minutes until golden in colour
- Cream together all ingredients until light and fluffy
- Prep Time: 15 minutes
- Cook Time: 20 minutes
