A yummy broccoli salad that is dead easy to make. I tasted this for the first time two weeks ago at a friend’s braai – it looked so fancy but was so easy to make! Enjoy!

Broccoli Salad

Ingredients

Scale

300g broccoli
2 small peppers, (different colours preferably ie. one red, one yellow)
1/3 cup cream
1/3 cup mayonnaise
½ tsp turmeric
¼ tsp paprika
½ tsp oil
¼ cup flaked almonds

 


Instructions

  1. In a bowl, mix the mayonnaise, cream, paprika and turmeric together until evenly combined.
  2. Place the broccoli in a microwaveable bowl, cover with cling wrap and then place in the microwave and cook on med-high for 1 minute. If you don’t have a microwave, bring some water to the boil in a pot, and once boiling, place broccoli in the water and cook for one minute. We are not trying to cook the broccoli right through, we are really just softening it slightly and bringing out its colour.
  3. In a small pan, heat up the oil, add the almonds and allow them to brown slightly. Be careful not to let them burn.
  4. Slice the peppers
  5. Place broccoli in a bowl, place the peppers on the top and when you are ready to serve the salad, spoon the cream/mayonnaise mixture on top of the broccoli and sprinkle the almonds on top.
