Coconut & Lime started as a place for Rachel Rappaport to share her recipes with friends. Since 2004 it has grown to one of the top 20 food blogs in the US, and one of the top 50 in the world. In the US it is also the only one that features only original recipes.
There is a wide range of cuisines and foods represented on Coconut & Lime – everything from authentic Indian curries to Korean, traditional American favourites, vegan and Japanese food.
What sets Coconut & Lime apart from other food blogs is the focus on inventive, original recipes that are easy to recreate at home, but are a slightly out of the ordinary. For example, some popular recipes have included Cuba Libra cupcakes, a East Meets South East Asian fusion pulled pork, kimbap (a Korean dish similar to sushi rolls), Chicken Chili with Hominy, peppermint marshmallows, blueberry key lime sherbet, along side American classics like red velvet cake, fried chicken and cinnamon buns. Each recipe comes with a clear list of ingredients and step by step instructions that even a cooking novice would feel comfortable following.
Rachel is a food writer and recipe creator, and Coconut & Lime boasts over 800 of her original recipes and receives many thousands of visitors a day. Rachel is a lifelong resident of Baltimore, MD, one of the quirkiest cities on the East Coast. Her background is diverse – she has a BA in History with a focus in urban history from the University of Baltimore and MA in Education from UMBC. But her true love is food!
Rachel has also written a cookbook called Everything Healthy Slow Cooker Book – which was published in August this year. Chapters include dips and appetisers, vegan, chili, vegetarian, soups and stews, slow cooker foundation recipes, recipes for two, recipes for a crowd, beef, pork, poultry and even desserts.
