My word! I never expected to LOVE this recipe so much. It is honestly delicious beyond the humble name of apple crumble! Because it’s in a cup (we used one of those pretty parfait glasses) you dig your spoon in and get a little bit of each layer and then you have an explosion of delicious-ness in your mouth! And it’s soooooooo quick and easy, and those tiny little apples you get in a tin that we used for garnish are so darn cute that it looks amazing as well! Winner! Tasty, easy to make, and easy on the eye! Yipppeeeeeee!
I just have to mention one more thing – that cream cheese / yoghurt / lemon layer might no sound like much, but it is absolutely AMAZING! Ok, ok where’s the recipe already, I hear you!

Completely scrumptious layered apple crumble in a cup – super tasty and easy to make and assemble in a jiffy!
Ingredients
- 2 large apples from the fridge (cut into small squares without skins)
- 4 Tablespoons butter
- 2 Tablespoons sugar
- 1 teaspoon cinnamon
- ½ teaspoon all spice
- 1 teaspoon lemon juice
- 1 tin of mini apples (optional for garnishing)
- 1 tub of cream cheese (at room temperature)
- 80g of plain/ Greek yoghurt
- 2 Tablespoons of lemon juice
- 2 1/2 Tablespoons of icing sugar
- 8 – 10 Oat Biscuits roughly crushed
- 1 almond or peanut brittle bar crushed
Instructions
Stewed Apples Layer:
- Place the apples, butter, sugar, cinnamon, all spice, teaspoon of lemon juice in a pot on the stove on a low heat for 10 minutes, remove the stewed apples and allow to cool, and leave syrup in the pot.
- Place the drained tinned apples in the pot in the same syrup, make sure they are coated with the syrup and leave on low heat for 5 minutes. Remove mini apples from syrup and set aside to cool.
Lemon Cream Cheese Layer:
- Mix the cream cheese, yoghurt, lemon juice and icing sugar together (with an electric beater).
- Start with an oat biscuit layer, then lemon cream cheese, then stewed cubed apples, lemon cream cheese again.
- Finish off with the almond or peanut brittle and a mini apple.
Enjoy once chilled.
