TACO TUESDAY is something to be celebrated… and you are in for a treat today! If you are throwing a fiesta, you have to whip up some of these delicious little beauties!  Or even if you are just having a barbeque in your backyard or family movie night, these taco bites are the perfect addition to any menu… QUICK and EASY!

These snacks are also a great recipe to make with the kids, as there are a number of safe steps that you can delegate to the kids to do completely on their own, which they will love and it will give them the sense of accomplishment, and make them feel like a real little chef!

Easy Taco Starter

Taco Bites

Description

Tasty, bite size taco snacks that will get any party started!


Ingredients

Scale
  • 2 Tbsp olive oil
  • 500g / 18oz ground beef
  • 2 Tbsp taco seasoning
  • Tinned diced tomatoes
  • Salt to taste
  • Tortilla Wraps
  • ½ cup grated chedder cheese for the top
  • Finish off with your favorite taco topping: sour cream, guacamole and salsa

Instructions

  1. Add olive oil to pan and fry ground beef.  Break up ground beef finely using a fork. Add taco seasoning. Add tinned tomatoes and salt to taste. Cook for a further 10 minutes.
  2. Cut discs from the wraps using a cookie cutter and place in a greased muffin tin (small for bite size or medium muffin tin for slightly larger cups) add spoonful of cooled ground beef filling and top with grated cheese.
  3. Bake in a 200°C or 400°F oven for 10 minutes or until cheese has melted and wrap ends are crispy.
  4. Serve with a dollop of sour cream, guacamole and salsa…garnish with cilantro.

Notes

Don’t have Taco Seasoning…make your own:
1 Tbsp chilli powder
¼ tsp garlic powder
¼ tsp onion powder
¼ tsp crushed red pepper flakes
¼ tsp dried oregano
½ tsp paprika
1 tsp ground cumin
1 tsp sea salt
1 tsp black pepper
