Elegant Mini Pavlova Nests with Cream

Description

A light, sweet and delicious dessert that is super economical and works perfectly, every time! If you have never tried to make meringues before, give it a whirl.


Ingredients

Scale
  • 1 egg white
  • 1 cup castor sugar
  • 1 tsp vinegar
  • 1 tsp vanilla essence
  • 2 tbs boiling water
  • 1 cup cream (whipped)

Instructions

  1. Beat the egg white until it forms soft peaks
  2. Add the vinegar and continue beating
  3. Gradually add the castor sugar (1 tablespoon at a time) and mix until stiff peaks are formed
  4. Add the vanilla and boiling water and mix
  5. Draw circles onto wax paper (roughly 9cm diameter) as a guide for piping the mixture into nests
  6. Using a large-sized piping nozzle and icing bag, pipe the mixture onto the wax paper in the round shapes.
  7. Place in a preheated oven at 125 degrees Celcius ( or 250 degrees Fahrenheit) for 50-55 minutes
  8. Allow to cool for a further hour
  9. Fill with fresh whipped cream and decorate with rose petals
  10. If you have, you can top with some colourful fruit pieces such as sliced strawberry or some blueberries.
