They are the perfect party idea for just about any party – birthday party, summer fiesta party, teen or tween party, housewarming, baby shower, they are really versatile.

My son was DEEPLY impressed when he saw AND when he tasted these, which is quite a reaction from a 10 year boy! From the bright, rainbow colors, the soft and sweet buttercream frosting and the sheer delight of discovering candy chocolate covered balls inside – the whole experience is cupcake heaven!

So, to make these wonderfully delicious multi-colored, layered, candy-filled cupcakes with a light vanilla butter cream icing….you need to follow this recipe.

I won’t lie, it takes a little time, and is a little bit finicky assembling the layers. Not difficult, just a little more time taken than your average cupcake! But OH SO WORTH IT. C’mon, try it, take the crown and be the cupcake queen today!

Description

For cupcakes with va va voom! Four color layers, buttercream icing and multicolored chocolate balls inside! The ultimate Fiesta Piñata Cupcakes!


Ingredients

Vanilla Sponge:

  • 3 cups flour
  • 1 ½ cups of sugar
  • 4 tsp baking powder
  • 1 tsp salt
  • 1 cup milk
  • 1 cup oil
  • 4 eggs
  • 2 tsp vanilla essence
  • Yellow, orange, green and pink gel coloring

Butter Cream Frosting

  • 9oz (or 250g) butter (off white)/ white margarine (for snow white)
  • 18oz (or 500g) icing sugar sifted
  • 1 tsp vanilla essence
  • Splash of boiling water  Plus: Mini coated candy of your choice to place in the centre!

Instructions

  1. Sift the dry ingredients, and add the sugar
  2. Add the wet ingredients to the dry ingredients, and beat until smooth
  3. Divide the mixture into four equal parts (approximately 1 and half cups each)
  4. Add a drop (or two) of each gel color to each bowl of batter
  5. Mix each color in well, you want to ensure it is evenly mixed, with no streaking.
  6. Place each colored batter into a greased 30 cm diameter shallow baking pan – alternatively disposable round foils can be used. If you have four smaller rectangular cake tins, you may be able to get more from each color batch.
  7. Bake in a preheated oven at 180 degrees for 15 minutes. For more even and predictable results, I bake two at a time, on the centre rack of my oven.
  8. Allow cakes to cool.
  9. Trim cakes to the same height.
  10. Place the top of the cake face down and use a 2.5” (6cm) cookie cutter to cut out 8 circles of each color.
  11. Start with a green disc and using a piping bag to ice the outer edge of the circle with your butter cream frosting.
  12. Next, use the back of a large piping nozzle to cut mini circles in the yellow and orange discs.
  13. Place frosting on the outer edges and stack on top of one another
  14. Place your mini candy carefully in the centre holes that you have created.
  15. Finish off with a pink layer and use a decorative icing of your choice/ matching colored sprinkles to finish off your Fiesta Cupcake.
