How cute and simple are these awesome Halloween Ghost cupcakes? Such an easy concept, so much fun to do!

Word of warning: making these ghosts entails a LOT of icing, you might want to scrape some off before little ones tuck in – or you might have a sugar-rushing ghoul to contend with! Or maybe that’s just part of the Halloween deal!

Ghoulishly Good Halloween Ghost Cupcakes Recipe

Delicious, and soooooo cute for Halloween! The easiest chocolate cupcakes with ghoulish ghosts and choc chip eyes.


Ingredients

Scale
  • ½ cup cocoa
  • 1 cup flour
  • 1 cup sugar
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 egg
  • ½ cup warm water
  • ½ cup buttermilk
  • ¼ cup canola oil
  • ½ tsp vanilla extract

Instructions

  1. Preheat oven to 180°C and line cupcake trays with cupcake liners.
  2. Sift cocoa, flour, sugar, baking soda, baking powder and salt into a bowl.
  3. Add the egg, water, buttermilk, oil and vanilla extract and mix with an electric beater for +/- 3 minutes.
  4. Using a 1/3 cup measure, scoop mixture into prepared cupcake trays.
  5. Bake for 18-20 minutes. To test if ready, prick cupcake with a toothpick and if it comes out clean with no mixture on, then the cupcakes are ready.
  6. Cool for at least 30 minutes before icing.

WHITE ICING

  1. Cream together 125g white margarine and 375g icing sugar.
  2. Add 1tsp vanilla essence
  3. 1tsp hot water

Place in a piping bag (with a medium plain round piping nozzle) and ice cooled cupcakes. Place two chocolate chips on each cupcake for ghost eyesJ
