Recipe for Unicorn Lollies (pssst…..don’t tell the kids, they are kind of healthy too!)

Super delicious Summertime treat / snack that is healthy AND refreshing AND delicious AND unicorn-themed! With a berry layer and a banana layer.


Ingredients

Scale

Berry Layer

  • 200ml coconut cream
  • 2 cups of mixed berries (strawberries/ rasberries/ blueberries)
  • 3 tsp honey
  • 1 tsp vanilla essence

Banana Layer

  • 200 ml coconut cream
  • 4 small bananas
  • 2 tbs peanut butter
  • 1 tbs honey

Instructions

  1. Blend the ingredients for the berry layer together
  2. Blend the ingredients for the banana layer together
  3. Place in ice pop mould one layer at a time
  4. Place ice pop sticks in the centre of each mould
  5. Freeze overnight and Enjoy!
