I’m so excited to tell you that I have THE perfect bite-sized snack / party appetizer / cocktail nibble recipe for you! Caramelised onion marmalade and brie bites have the ultimate mix of flavors, combining crusty ciabatta bread (toasted) with the sweet – tangy bite of the caramelised onion and earthy, buttery Brie cheese. All in one mouthful! Nom nom nom! One mouthful is NOT enough! But I do love making them bite-sized – just so much more convenient if you are standing around at a party.
Great for the parents at a children’s party, a little pre-dinner bite or even the appetizer at a dinner party or part of a delicious cocktail party spread. What’s more, despite being rather sophisticated on the taste profile scale, it’s really economical to make, as you only use a little Brie on each bite, just enough to get that perfect taste mix going on in your mouth.
You can do all the preparation before-hand, and then pop them in the oven for 5 – 8 minutes just before you want to serve, as they are definitely best while still a little warm. Hmmmmmm, making myself very hungry here and all I have to eat is an apple! The onion and brie bites we made for this recipe and photos are LONG gone, damn! Believe, once you have done this once you will do it again and again!

Description
The most mouth-watering set of flavors and textures combine in every mouthful – crusty ciabatta, sweet-tangy caramelised onion and creamy, earthy Brie.
Ingredients
- 1 small loaf ciabatta
- 10 ml olive oil (for brushing ciabatta)
- 2 red onions, sliced
- 1 Tablespoon butter
- ½ teaspoon salt
- ¼ teaspoon ground pepper
- ½ teaspoon thyme
- ½ teaspoon mustard seeds
- ½ Tablespoon brown sugar
- 3 Tablespoons balsamic vinegar
- 125g of Brie cheese
- Sprigs of thyme for garnishing
Instructions
To make Balsamic Onion Marmalade:
- Heat a medium-sized pan
- Add butter and onions to pan.
- Sauté onions until they are translucent, usually about 5-6 minutes.
- Add in mustard seeds, salt and pepper.
- Stir and continue to sauté for another 10 minutes (until the onions brown and the liquid is reduced.)
- Add balsamic vinegar, thyme and sugar to onions, stir and sauté for another 2-3 minutes until vinegar has soaked into onions.
- Remove from heat.
To assemble your bites:
- Cut ciabatta into slices, brush with a little olive oil and toast in the oven, under a grill or in a toaster until a light golden brown.
- Place the balsamic onion marmalade onto the ciabatta and finish off with a slice of Brie.
- Bake in a preheated oven of 300 Farenheit (150 degrees Celsius) for 5-10 minutes until the cheese starts to melt.
- Garnish with Thyme sprigs and place on a platter or pretty wooden serving board.
Notes
The caramelised onion marmalade may be made ahead and stored in an air tight container for up to one week.
