And all the great benefits of coconut ice remain, such as the fact it is super-quick, super-easy, tastes DEE-LISH, requires no baking and looks really purrrrdy! Plus it’s awesome party food!
By dividing the mixture into 3, and using vibrant gel food coloring, you can make coconut ice with a bit of a unicorn twist. See, what I did there – unicorn – spiral horn – twist?

Description
Quick, easy and delicious coconut ice recipe with a unicorn theme! Great for playdates and parties. NO baking required!
Ingredients
- 160ml sweetened condensed milk
- 2 cups icing sugar
- 2 cups desiccated coconut
- 2–4 drops each blue/ purple/ pink food coloring
Instructions
- Sieve the icing sugar.
- Now add the coconut and condensed milk to the icing sugar and mix together until well combined.
- Divide the mixture in thirds and add one color (blue, purple or pink) to each third of the mixture.
- Press the white mixture into the base of a square pan or even a plastic lunchbox.
- Now spread and press the pink mixture over the white mixture.
- Place in the fridge so that it can harden.
- Once it has set, cut into small squares.
