Brace yourselves y’all! This 4th July dessert is the EASIEST and the TASTIEST dessert you will ever make. It is heaven on a spoon. It is based on a popular dessert in South Africa called Peppermint Crisp Pudding, the only difference here is that this version has no peppermint Crisp (which is a chocolate in South Africa) sprinkled on top. The structure is there though guys, the structure is definitely there and you are welcome to throw some peppermint chocolate on top for fun too.
Just have a look at that photo though for a minute. Look at the layers, cream and tinned caramel mixed together, then layered in between Tennis Biscuits which have been left to soften a little in the fridge. The top later is whipped cream spread across the top for a bright white contrast to the sprinkled decorations. Doesn’t it just say “yummmmy” or “taste me nowwwww”?
Besides tasting good and being easy tot prepare, it has only a handful of wicked ingredients and there is no baking. No oven-using, no risk of anything getting burnt. It’s just fridge time, which makes this dessert a great, make ahead of time option! I would however, only sprinkle the jewels on top just before serving. We don’t want colorants leaking off onto the cream. That just wouldn’t look so pretty.
You could serve it with vanilla ice-cream for a very indulgent option or you could just enjoy this creamy caramel dessert as is. It is delicious either way! The success of the recipe lies in making sure that your cream is whipped to stiff peaks before adding the caramel. This ensures it is nice and thick to hold the biscuits in place and to create a light fluffy cream once set.

- 1 tin caramel filling (12.6 oz or 360g)
- blue and red sprinkles (and some gold or silver sprinkles too)

- Repeat this layering until you have two layers of tennis biscuits and 3 layers of cream. (keep adding layers if you have enough cream-caramel mixture and biscuits). End off with a cream-caramel layer.
- Add whipped cream (from the spray bottle) to the top of the dessert and spread to create a smooth topping, covering the cream-caramel layer below.
- Sprinkle decorations on top. You can even sprinkle chocolate shavings on top!
- Place in fridge for 3-6 hours to set (this allows the biscuits to soften). Enjoy!!
