Hello my little crumpets on a stick!

Not only am I greeting you, I am describing the delicious bites of scrummy yummy we made recently. Such a perfect bite-sized treat. Specifically delicious when the crumpets are sandwiched together with cream, garnished with strawberry slivers, a mint sprig and a a sprinkle of icing sugar. With a little wooden spoon in the middle, it’s a neat treat too!

And with Harry and Meghan’s Royal Wedding coming up very soon, it’s the perfect time to seek out those wonderfully English recipes that will make for a fabulous High Tea. Crumpets on a stick

Description

Delicious crumpets sandwiched together with cream, garnished with strawberry slivers, a mint sprig and a a sprinkle of icing sugar.


Ingredients

Scale

For the crumpet batter:

  • 500ml flour
  • 2 eggs
  • 5 tbsp sugar
  • 1 ½ tbsp butter, melted
  • 4 tsp baking powder
  • 1/3 tsp salt
  • 250ml milk

For assembling and garnishing:

  • Strawberry slivers
  • Mint leaves
  • A little cream (about 1/3 of a cup)
  • Icing sugar for dusting

Instructions

  1. Beat the eggs and gradually add the sugar
  2. Add half of the milk and the melted butter to the egg
  3. Stir well.
  4. Sift the flour, baking powder and salt and add to the egg mixture.
  5. Gradually stir in the remaining milk to form a smooth mixture.
  6. If all ingredients are well mixed then don’t stir anymore.
  7. Drop spoonfuls of dough into a metal scone cutter on a greased heavy bottom frying pan or into a “griddle”.
  8. Turn once the top is full of air bubbles (bottom should be golden brown) and bake on the other side.
  9. Sandwich together with cream, garnish with strawberry slivers and mint, place a wooden fork in the centre and add a sprinkle of icing sugar
