Description
The softest vanilla sponge with the creamiest buttercream icing and a few patriotic modifications makes for the most awesome July 4th Fireworks Cupcakes ever!
Ingredients

For the Cupcakes:
- 1 ½ cups flour
- ¾ cup sugar
- 2 tsp baking powder
- ½ tsp salt
- ½ cup milk
- ½ cup oil
- 2 eggs
- 1 tsp vanilla essence
For the icing:
- 250g icing sugar
- 125g white margarine
- 125g butter
- 2tsp vanilla essence
- 2Tbs milk
Instructions
Cupcakes:
- Sift dry ingredients together.
- Add wet ingredients to the dry ingredients and beat well until smooth and creamy.
- Place in red paper cups into muffin tin and fill each cup 3/4 full.
- Bake for 15 minutes at 180° C.
Icing:
- For blue and red icing: Cream together 125g butter and 125g icing sugar.
- Add one tablespoon of milk and 1 tsp vanilla essence and mix well.
- For white icing: use 125g white margarine and 125g icing sugar
- Add two tablespoons of milk and 1 tsp vanilla essence and mix well.
- Place each color into a piping bag. I started with an entire layer of blue made with the star nozzle. Then topped that with the white and finally, a gorgeous pop of bright red on the top!
