Slime Cupcakes Recipe

Description

Delicious vanilla cupcakes, with buttercream icing and lime curd – slime cupcakes never tasted sooooo good!


Ingredients

Scale

Cupcakes:

  • 1 ½ cups flour
  • ¾ cup sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup milk
  • ½ cup oil
  • 2 eggs
  • 1 tsp vanilla essence

Buttercream icing:

  • 125g white margerine
  • 375g icing sugar
  • 1 tsp vanilla essence
  • 1 tsp hot water

Lime curd: 

  • 2/3 cup bottled lemon juice
  • 3/4 cups sugar
  • 2 eggs
  • Green food coloring
  • Yellow food coloring

Instructions

Vanilla Cupcakes:

  1. Sift dry ingredients together.
  2. Add wet ingredients to the dry ingredients and beat well until smooth and creamy.
  3. Place paper cups into muffin tin and fill each cup 3/4 full.
  4. Bake for 15 minutes at 180° C.

Buttercream icing:

  1. Cream together 125g white margarine and 375g icing sugar.
  2. Add 1tsp vanilla essence
  3. 1tsp hot water

Place in a piping bag and ice cooled cupcakes with piping bag and nozzle.

Slime Curd:

  1. Dissolve 2/3 cup bottled lemon juice into ¾ cup sugar over a medium heat in a saucepan.
  2. Lightly beat 2 large eggs (at room temperature) in a small bowl.
  3. Trickle the hot lemon syrup into the egg mixture whisking constantly to prevent curdling
  4. Beat for about a minute and return mixture to saucepan.
  5. Cook over a medium heat, stirring constantly, until the curd starts to bubble and thicken, add 8-10 drops of green and 2-3 drops of yellow food coloring.
  6. Allow to chill and drizzle over white piped iced cupcakes
