Description
Delicious vanilla cupcakes, with buttercream icing and lime curd – slime cupcakes never tasted sooooo good!
Ingredients
Scale
Cupcakes:
- 1 ½ cups flour
- ¾ cup sugar
- 2 tsp baking powder
- ½ tsp salt
- ½ cup milk
- ½ cup oil
- 2 eggs
- 1 tsp vanilla essence
Buttercream icing:
- 125g white margerine
- 375g icing sugar
- 1 tsp vanilla essence
- 1 tsp hot water
Lime curd:
- 2/3 cup bottled lemon juice
- 3/4 cups sugar
- 2 eggs
- Green food coloring
- Yellow food coloring
Instructions
Vanilla Cupcakes:
- Sift dry ingredients together.
- Add wet ingredients to the dry ingredients and beat well until smooth and creamy.
- Place paper cups into muffin tin and fill each cup 3/4 full.
- Bake for 15 minutes at 180° C.
Buttercream icing:
- Cream together 125g white margarine and 375g icing sugar.
- Add 1tsp vanilla essence
- 1tsp hot water
Place in a piping bag and ice cooled cupcakes with piping bag and nozzle.
Slime Curd:
- Dissolve 2/3 cup bottled lemon juice into ¾ cup sugar over a medium heat in a saucepan.
- Lightly beat 2 large eggs (at room temperature) in a small bowl.
- Trickle the hot lemon syrup into the egg mixture whisking constantly to prevent curdling
- Beat for about a minute and return mixture to saucepan.
- Cook over a medium heat, stirring constantly, until the curd starts to bubble and thicken, add 8-10 drops of green and 2-3 drops of yellow food coloring.
- Allow to chill and drizzle over white piped iced cupcakes
