Ingredients

Scale

Ingredients for the mince:

  • 1/2 tbs olive oil
  • 150g ground beef
  • 1 tbs taco seasoning
  • 1/4 tin diced tomatoes
  • salt to taste

Ingredients for the guacamole:

  • 1/4 shredded red onion,
  • 1 avocado
  • 1/2 chopped chili
  • Sprinkle of paprika,
  • Juice of 2 limes
  • Salt and pepper to taste

Ingredients for the salsa:

  • 1/2 a finely chopped tomato
  • 1/4 chopped red onion
  • 1/2 chopped chili
  • 2 tsps chopped cilantro
  • Squeeze of lime juice
  • Salt and pepper to taste

Other ingredients:

  • 1/2 tub sour cream
  • 1 cup grated cheddar cheese

For Garnishing:

  • Lime slices
  • Taco chips
  • Sprinkle of cilantro

Instructions

To make the mince:

  1. Add olive oil to pan and fry mince, breaking up finely using a fork.
  2. Add taco seasoning.
  3. Add tinned tomatoes and salt to taste.
  4. Cook for a further 10 minutes.
  5. Make sure the mince mixture is fine enough to place into individual glasses.

To make the guacamole:

  1. Combine all the ingredients together
  2. Mash with a fork, or whizz with a blender

To assemble your layers:

  1. Start with mince, then guacamole, then sour cream, then grated cheese, then salsa, top with garnish
  2. It really helps to make it look neat if you wipe down the sides of the glass with a cloth between each layer to give that gorgeous color definition. It is also great to stamp each layer down a bit with the back of a teaspoon so there are no air bubbles.
  3. We used a slice of lime, a couple of olives and some of the red onion on top to garnish.

Notes

  • You can store these in the fridge until ready to serve
  • If you do not have sour cream, you can use normal cream with 1 tbsp of lemon or lime juice per 250ml to make sour cream.
